Clean the rhubarb and chop into bite-sized pieces. Preheat your oven to 350°F and grease a 9x5-inch loaf pan.

Combine dry ingredients in one bowl and wet ingredients in another. Slowly incorporate the dry mix into the wet mix. Fold in rhubarb.

Pour batter into the prepared pan and bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before slicing.
