Chop rhubarb, melt butter, and preheat the oven to 350°F. Grease a loaf pan lightly.

In one bowl, blend eggs, melted butter, and vanilla. In another, mix dry ingredients. Combine them and fold in rhubarb.

Mix flour, sugar, cinnamon, and cold butter until crumbly. Sprinkle over the bread batter.

Pour the batter into the loaf pan and bake at 350°F for 60 minutes, or until a toothpick comes out clean.
