# Ingredients:

01 - 2 cups cherry tomatoes
02 - 1 jalapeño, halved
03 - 1 small red onion, halved
04 - 2 garlic cloves
05 - 2 tablespoons olive oil
06 - Salt, to taste
07 - Juice of 1 lime
08 - 1/4 cup fresh cilantro leaves

# Instructions:

01 - Wash and dry the cherry tomatoes. Halve the jalapeño, remove seeds if desired for less heat. Halve the onion and keep garlic unpeeled.
02 - Preheat oven to 400°F (200°C). Put the tomatoes, jalapeño, onion, and garlic on a baking sheet, drizzle with olive oil and sprinkle with salt. Roast for 20-25 minutes.
