Wash and dry the cherry tomatoes. Halve the jalapeño, remove seeds if desired for less heat. Halve the onion and keep garlic unpeeled.

Preheat oven to 400°F (200°C). Put the tomatoes, jalapeño, onion, and garlic on a baking sheet, drizzle with olive oil and sprinkle with salt. Roast for 20-25 minutes.

Let ingredients cool slightly, then transfer to a blender with cilantro and lime juice. Pulse until desired texture is reached.

Adjust salt and lime as needed. Transfer salsa to a bowl, garnish with cilantro, and serve.
