Grab a medium mixing bowl, your favorite one that's seen all your kitchen adventures. Gently combine the full-fat cottage cheese and the grated Parmesan. This is where I sometimes get a little messy, cheese sticking to the spoon, but it's all part of the fun, right? Stir it well, making sure that Parmesan is distributed evenly. If you're adding garlic powder and onion powder, toss them in now. I always add a generous pinch, feeling the spices between my fingers, anticipating that delicious aroma. It should look like a thick, lumpy, cheesy mixture.

Now for the hands-on part! Line a baking sheet with parchment paper – a step I've definitely forgotten before, resulting in a sticky mess. Using a small spoon or a cookie scoop (my personal preference for uniformity), scoop out small portions. Roll them gently between your palms into little tot-like shapes. Don't worry if they're not perfectly uniform; mine rarely are! This is where you can see the texture, feel the slight stickiness. Aim for about 1-inch nuggets. I usually make a few extra because, well, taste testing is mandatory.

If you're using an air fryer, preheat it to 375°F (190°C). For oven baking, preheat your oven to 400°F (200°C). This preheating is crucial for that initial crisp, a mistake I've made by rushing it and getting less-than-crispy results. Arrange your cottage cheese tots in a single layer on the parchment-lined baking sheet or directly in the air fryer basket. Give them some space; they need room to breathe and crisp up, or else they'll just steam.

Pop those trays or baskets into the preheated air fryer or oven. For the air fryer, cook for 10-12 minutes. If you're oven-baking, it’ll be more like 15 minutes. You'll start to see them firm up and turn a light golden color around the edges. I always peek in, watching for that transformation, a little impatient for the magic to happen. This is where the kitchen starts to smell absolutely incredible, a warm, cheesy aroma filling the air.

After the initial cooking time, carefully flip each tot. This step is super important for even browning and crispness on all sides. I've definitely missed a few flips before, ending up with some pale bottoms, oops! Continue cooking in the air fryer for another 8-10 minutes, or in the oven for an additional 10-15 minutes, until they’re beautifully golden brown and seriously crispy. You want them to have that satisfying crunch when you tap them.

Once they're golden and gloriously crispy, carefully remove the crispy two-ingredient cottage cheese tots from the air fryer or oven. Let them cool for just a minute or two – they'll be piping hot! Transfer them to a serving plate, maybe sprinkle with some fresh chives if you're feeling fancy. The aroma now is just heavenly, a mix of toasted cheese and savory goodness. Serve them immediately with your favorite dipping sauce. I always grab one right away, burning my tongue a little, but it's always worth it for that first bite!
