In a medium bowl, combine your flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk it all together until you have a smooth, somewhat thick batter. Preheat your air fryer to 375°F (190°C). Carefully arrange the coated cauliflower in a single layer in your air fryer basket. Seriously, don't overcrowd it! If you do, they'll steam instead of crisp, and that's just a tragedy. You'll likely need to do this in two or three batches, depending on your air fryer size. Air fry for about 15-20 minutes, shaking the basket halfway through, until they're tender and lightly golden brown.

While your cauliflower is doing its thing, melt your butter in a small saucepan or microwave-safe bowl. Whisk in the hot sauce until it's perfectly combined and glossy. Once the first batch of cauliflower is done, transfer them to a large bowl. Pour about half of your buffalo sauce over the cauliflower and gently toss to coat. Back into the air fryer basket they go, again in a single layer. Air fry for another 5-7 minutes at 375°F (190°C), or until they're beautifully crispy and the sauce is slightly sticky. Repeat with the remaining cauliflower and sauce. Serve immediately and watch them disappear!
