# Ingredients:

01 - 1 cup all-purpose flour
02 - 1/2 cup granulated sugar
03 - 1/4 teaspoon baking powder
04 - 1/2 cup unsalted butter, softened
05 - 2 large eggs
06 - 1 teaspoon vanilla extract

→ For the Caramelized Apricots

07 - 4–5 large apricots, halved and pitted
08 - 1/2 cup granulated sugar
09 - 2 tablespoons unsalted butter

# Instructions:

01 - Wash, halve, and pit the apricots. Set them aside while you begin making the caramel.
02 - Melt sugar in a skillet over medium heat until golden, then add butter and let it emulsify before removing from heat.
03 - Arrange apricots in the caramel in your skillet or cake pan. Top with cake batter, spreading evenly.
04 - Bake in a preheated oven at 350°F (175°C) for 35–40 minutes, or until a toothpick comes out clean.
05 - Let the cake cool for 10 minutes, then invert onto a plate. Serve warm.
